¼ cup freekah
3 medium tomatoes diced
3 cups coarsely chopped flat leaf parsley
3 spring onions sliced finely
½ cup chopped fresh mint
1 clove garlic crushed
Juice of 1 lemon
4 tablespoons pomegranate molasses
¼ cup olive oil
1 small pomegranate seeds removed
In a pot of boiling water simmer freekah for about 20-30 minutes or until grain is cooked. Pour into a colander. Drain & rinse under cold water. Set aside to drain.
Place freekah in a bowl with all other remaining ingredients. Mix well to combine.
Salt & pepper to taste
