2 large ripe avocados, peeled, deseeded
1 ½ cups Jalna Greek Yoghurt
1-2 tablespoons lemon juice, to taste
1-2 teaspoons wasabi or tabasco
Crushed ice (optional if no time to chill soup)
Salt & cracked black pepper
2 green onions, trimmed, coarsely chopped
8 cooked prawns, peeled, deveined, tails on
Chopped coriander or mint, to garnish
- Place avocado, 1 cup yoghurt, lemon juice, wasabi and ice (optional) in a blender. Puree until smooth.
- Season with salt and pepper, to taste. Chill until required.
- Stir to combine ingredients before serving. Pour soup into 4 bowls or glasses and garnish with a dollop of yoghurt, 2 prawns, tails up and coriander.
Tip: Prawns could be substituted with cooked crab or Balmain Bugs.
