Springtime Slice

Ingredients:

1 cup mixed raw nuts
1 cup shredded coconut
Pinch sea salt
2 tbsp coconut oil
2 tbsp rice malt syrup
3 tbsp grass-fed gelatine
1/4 cup warm water
3 cups Jalna Sweet & Creamy Peach Mango Yoghurt
Juice of 1 lime
1 tsp spirulina (optional)
Shredded coconut and lime zest, for serving

Method:

Blend together 1 cup mixed raw nuts with 1 cup shredded coconut, pinch sea salt, 2 tablespoons coconut oil and 2 tablespoons rice malt syrup. Press into a tartlet base and refrigerate. Meanwhile, make the filling by sprinkling 3 tablespoons of grass-fed gelatine over 1/4 cup warm water, then whisk to dissolve to ensure no lumps. Stir the gelatine mix into 3 cups Jalna Sweet & Creamy Peach Mango Yoghurt, with juice of 1 lime, and 1 teaspoon of spirulina (optional - for that spring green). Pour the mixture into the nut crust and refrigerate for 4 hours until set. Top with shredded coconut, lime zest and share with friends.
