Baked Oatmeal Breakfast Pudding

Ingredients:

1 1/2 cup oats
1/2 cup desiccated coconut
3 tbs pepitas
1 tsp chia
1 cup Jalna Sweet n Creamy Blueberry yoghurt
3/4 cup almond milk
1/4 cup EVOO
1 egg, whisked
1/2 cup frozen berries
1/2 cup pecans 

Method:

Preheat oven to 190 degrees celsius. 

Place all dry ingredients (except pecans) into a bowl. 

In a separate jug, combine all wet ingredients with a whisk.

Pour wet ingredients over dry ingredients and combine well.

Pour into a ceramic baking dish, top with pecans and bake for 50 minutes or until set. 

Serve warm with extra Jalna yoghurt.
